Today, I want to share a recipe that embodies this philosophy: Heirloom Tomato Tart with Phyllo Dough. This tart, made with heirloom tomatoes and fresh herbs from my garden, celebrates natural flavors and wholesome ingredients.


The Recipe: Heirloom Tomato Tart with Phyllo Dough

Ingredients:


  • 4-5 medium heirloom tomatoes, sliced

  • 2 teaspoons fresh thyme, chopped

  • 2 teaspoons fresh dill, chopped

  • 2-3 cloves garlic, minced

  • Salt and pepper to taste

  • 1/2 cup grated Parmesan cheese

  • 1 cup cottage cheese

  • 1 egg

  • 8-10 sheets of phyllo dough, thawed

  • Olive oil or cooking spray


Instructions:


Prepare the Tomatoes: 1. Slice the heirloom tomatoes and place them on a paper towel to drain some of their moisture. Sprinkle with a little salt and let them sit for about 15 minutes. Pat them dry with another paper towel.


Prepare the Phyllo Dough: 2. Preheat your oven to 375°F (190°C). 3. Unroll the phyllo dough and cover it with a damp towel to prevent it from drying out. 4. Lightly grease a tart pan with olive oil or cooking spray.


Assemble the Phyllo Crust: 5. Place one sheet of phyllo dough in the tart pan and lightly brush it with olive oil or spray with cooking spray (I like avocado oil spray). 6. Place another sheet of phyllo dough on top, slightly offset from the first, and brush with olive oil or spray again. Repeat this process until you've layered 8-10 sheets, ensuring each sheet is lightly oiled. This will create a sturdy crust. 7. Trim any excess dough hanging over the pan's edges.


Prepare the Filling: 8. In a bowl, mix together the cottage cheese, Parmesan cheese, minced garlic, chopped thyme, and chopped dill. Add salt and pepper to taste. 9. Crack the egg into the mixture and stir until well combined.


Assemble the Tart: 10. Spread the cheese and herb mixture evenly over the phyllo dough. 11. Arrange the tomato slices on top of the cheese mixture in a circular pattern, slightly overlapping them. 12. Drizzle a bit of high-quality olive oil over the tomatoes and sprinkle with additional thyme, dill, salt, and pepper.


Bake the Tart: 13. Place the tart in the preheated oven and bake for about 25-30 minutes, or until the phyllo is golden brown and crispy and the tomatoes are tender. 14. If the edges of the phyllo start to brown too quickly, cover them with aluminum foil to prevent burning.


Cool and Serve: 15. Remove the tart from the oven and let it cool slightly before slicing. 16. Serve warm or at room temperature, garnished with extra fresh herbs if desired.
